It has a high content of monounsaturated hydrocarbons of oil. The advantages of olive pomace oil are especially evident when frying between 130 and 240 ° C. At these temperatures, olive oil forms a crunchy, golden crust that makes the fried food much more appetizing without compromising its nutritional value.
The oil hardly penetrates into the food, leaving it light and digestible. The olive oil does not break off when the temperature is no more than 240 ° C, which is a much higher smoking point than most conventional oils (such as soybean oil or sunflower oil). It can be reused 3-4 times as long as it is carefully filtered through gauze, muslin or a suitable paper filter after each use.
Greek olive pomace oil is olive oil that is obtained from olive oil after the first press. Once the mechanical oil extraction of olive oil is completed, about 5-8% of the oil remains in the pulp, which must then be extracted with the help of solvents, an industrial technique used in the production of most other edible oils.
